Tiramisu, KL and so much more!

This is my 3rd time making tiramisu and I'm still exploring the different receipes and methods of perfecting it!

For the recipe below, I have used Cognac instead of the Marsala wine which was widely used in many recipes I've seen online. But I had just bought a bottle of Marsala wine earlier and I will used it for my next round which is later! Think I'm super addicted to making this coffee dessert!

My mum who is slightly diabetic is also very addicted to eating it! I am trying very hard to keep it away from her! Hehehe...

So here's the recipe and the method. Feel free to use the recipe and try to make one soon!

Miss E's Tiramisu

Ingredients

500g mascarpone cheese
4 eggs
4 tablespoons of sugar
6 tablespoons of Marsala wine/Cognac
4 tablespoons of milk
½ cup of black coffee
cocoa powder

Method

Add the milk , 2 tablespoon of cognac and 1 tablespoon of sugar
into the black coffee and mix well.
Leave it to one side for it to cool to room temperature.

Separate the yolks in one mixing bowl.
(I only have 1 mixing bowl, thus have to use my mum's
tradtional kueh-making tray for the yolk mixture...hehehe).

Put the whites into another mixing bowl.

Add the remaining 3 tablespoon of sugar, and 4 tablespoon of cognac into the yolks.

Mix well with a whisk.

Add the mascarpone cheese onto the yolk mixture and mix well til even.

The mixture should looked something like that.

After you are done with the yolk mixture, start whisking the egg-whites!
I don't own an electrical beater lor, so I am using my mum's vintage
spring egg-beater (older then me, ok!).

This is hard work lei!
Beat, beat, beat, beat, beat!!!

Can see that it's beginning to become fluffy?!

Finally!
Whip the egg-whites until stiff peaks form and you are done!

Pour the fluffy mixture into the yolk-cheese mixture and start folding in.

Looked like clouds!
Continue to fold into the mixture until everything is even!

Voila!
All done!

Time to soak the sponge fingers!
BIG TIP!: soak ONLY the SUGARED side of the fingers!
Try not to pour too much coffee onto the fingers if not it will get very soggy!

Cute dessert cups from daiso is great for tiramisu!
At only $2 for 7 mini cups with lids!

Lay the fingers on the bottom of the container.
You may also use the rectangle microwavable containers that you might have recycled from a tabao meal!
As the containers are too small for my sponge fingers, I had to break it to fit!
Always placed the soaked side facing up too!

After you had the bottom layer of sponge fingers, pour the cheese mixture to cover over it.
Remember to pack the fingers close together!

A special method which I have seen from this lady who shared her recipe online - sprinkle cocoa powder on top of every layer of sponge fingers before to you pour the mixture!

So here's how it's gonna be like!
sponge fingers -->cocoa powder -->cheese mixture -->
sponge fingers -->cocoa powder --> cheese mixture.

Ta-dah!!!
Almost all 7 cups are filled!

There is 1 cup which was half-filled. I think the eggs I used were a bit small therefore there wasn't enough mixture for all 7 cups.

Place the cups into the fridge and chill for at least 8 hours before you consume.

Lastly, sprinkle cocoa powder generously before serving!

Miss E's version - get a small bar of milk or dark chocolate, see which ones would you prefer, put in into the fridge to make it harder and when it's hard enough, take a small knife and start shaving some chocolate bits and sprinkle on top of the cocoa powder.

Very shiok!!!! For the serious chocolate-addicts like me!!!

Saturday with Celine and Bert
Last Saturday while Boo was working his ass off at the IT show, Celine and Bert baby-sitted me! We went to shop, eat and hang out. It was pretty cool!

which you obviously can't see and she would have kill me if I tried to make a big fuss about the top by snapping pics and posting it online! Hehehe!

Bert finally let me take a nice picture of her!
Hehehe.... She's all decked out in adidas lor!
That day she bought 3 more adidas tops and 1 more pair of adidas sneakers.
She intends to build a 7-day adidas wardrobe.
And Yes, she works there.

To KL with Dee and Shiying!

Was told to make a trip with Delia and Zihanna (Shiying's new nick!) to KL to make a presentation for the Isetan buyer on tuesday morning therefore we had to fly in from monday morning just in case we turned up late if we had flew in from tuesday morning instead~!

BORING!!!

The only excitement I had was the shopping! It was quite shiok to shop in KL lah with Sing dollar slightly stronger then the Ringgit.


Lunch at T1 at 3.15pm.
Popeyes chicken!
That day the chicken really tasted quite bad lei! There was a very strong frozen chicken taste and it was quite oily lor!
I think their standards had continued to drop further!

This is my 1st time going budget!

Worse still, the counter staff also had a "budgeted" attitude!
Was telling the girls that Air Asia even had to SAVE on the smiles and the 'thank-you's!

We were treated to dinner at Tony Romas!
There were no pork ribs for the obvious reasons lah and we had forgotten about it!

The funny waiter from Bangladesh, Raya, showed us the different sauce they have to go along with our food. But I felt there wasn't a need because we didn't even order any ribs!
While explaining, he drew a smiley face on the plate!

Shiying and me both had a "blacken" salmon!
Very delicious!!!

By "blacken", it doesn't mean chao ta (burnt) lah!
It was a method of cooking they used - to cover the salmon with spices before they pan-fried it!
The result - nice and crispy on the outside, juicy and tender on the inside!

The servings at Tony Romas were huge and we can't really finished the food! My Malaysians colleagues had to pack the food back in order not to waste it!

After the presentations, we went kuku!!!!

What a busy Saturday!

Last Saturday, I learnt to make Tiramisu! Christina was so kind to teach us how to make this sweet non-alcoholic version of the very famous Italian dessert! We had discussed it after our boxercise sessions and we have decided to head to Dulcy's place to learn the ropes!
Me, being the "not-very-domesticated" woman, just went along to have fun! Hahaha.... Although I have always wanted to learn baking and making sweet stuffs, I have never been enthusiastic enough to start! I only ogled at lovely pictures of cupcakes and muffins and other sweet treats!

So there I was at Bedok Central with Christina and Dulcy - 15mins late (as usual) buying stuffs for the tiramisu! We met at NTUC but after 15mins we left the place with nothing! We were looking high and low for the sponge fingers which are absolutely needed for tiramisu. There wasn’t any mascarpone cheese too! So, since Bedok has 3 supermarkets and a Phoon Huat outlet, we thought we could get it elsewhere lah. So we went to Phoon Huat to try to see if there were stuffs there we need and luckily, there were the mascarpone cheese but unfortunately, the sponge fingers were sold out! Damns! We thought we can have better luck at Shop & Save next door but no sponge fingers in sight! We let Dulcy go back first with some of the stuff we had gotten and we continue in search of the sponge fingers!

I had to brave myself to go to Seng Song (there is always an over-powering fishy stench at the entrance) to look.

Nope. Non existence.

Went back to NTUC to try to look for alternatives. By then, we had wasted 1 hour walking the whole of Bedok Central! Then, I gave Boo an SOS call! I remembered that there was a Cold Storage outlet at Causeway Point and most likely Cold Storage should have it! We were so desperate til we were almost getting biscuits as alternatives!

Boo immediately rushed out of the house to help us get the sponge fingers and took a cab from Woodlands to Bedok to make sure we weren’t waiting too long for it! That’s very nice of my boyfriend! Hehehe!!!!

Before Boo arrived, we started with the mixture 1st. As I had promised Christina not to reveal the recipe for this tiramisu, I will only show bits and pieces!

The Ingredients!
Our cups of instant coffee.
I seriously don't recommend this.
Buy Kopi-O from the kopitiam is better. Eggs!
Add in the sugar!
The girls!
Add in the mascarpone into the egg and mix well!
In less then a minute, my mixture is soooo smooth....
The Sponge fingers!
Boo is our saviour!
Soak the fingers with coffee!
Don't put too much if not will end up like my soggy tiramisu!
2nd layer of fingers~!

Done!
Put in the fridge to chill for 8 hours minimum!

I left my dessert in Dulcy's fridge and collected it the next day cos I was meeting Kristy and Edwin for dinner! Yay! We can see baby Chelsea again!

So, how about the tiramisu?
The Verdict:
My first-ever tiramisu after testing, wasn’t as good as it looked. It was a bit too sweet and the sponge fingers were too soggy. I think I’d prefer the alcoholic version and maybe not use instant coffee as there wasn’t really much coffee taste to it.

Boo took a bite and gave me a “please-don’t-ask-me-to-have-another-bite” smirk. My mama says she likes it! Think she is giving me face lah!

I tried another recipe last Wednesday when I had the day off. I searched for some recipe online and saw a few easy ones and I combined them together, use a different method and made an alcoholic one!
I like it better then the 1st although I need to add more liquor and use stronger coffee!
I am thinking of making 1 more tonight or tomorrow! Will take pictures and share the recipe!
